Bean & Vegetable Soup |

Ingredients:
6 oz haricot beans, 1 tablespoon oil, 2 onions, 2 carrots sliced,
2 sticks celery sliced, 2 potatoes chopped, 13 oz can tomatoes, 6
cups water, 2 tablespoons chopped parsley |

Instructions:
Soak beans overnight in water, drain and cook in boiling water
for about 1 hour or until soft; reserve liquid, puree liquid and
beans in blender until smooth. Heat oil in saucepan, add onion,
stir fry until tender. Add carrots, potatoes, undrained tomatoes,
water, beans and bean puree. Bring to boil, cover reduce heat,
simmer 20 minutes or until vegetables are tender, stir in parsley
and serve. Serves 4. |
